Easy Strawberry Mug Cake
Ingredients
- 4 tbsp All-purpose flour
- 1/2 tsp Baking powder
- 1/8 tsp Salt
- 1.5 tbsp Sugar
- 2 tbsp Oil I used vegetable oil. You can use any neutral -tasting oil you prefer.
- 3 tbsp Milk
- 1/2 tsp Vanilla extract
- 3-4 tbsp Strawberries, chopped
- 2 tbsp Dark chocolate chips (Optional)
Topping (Optional)
- 1.5 tbsp Mascarpone cheese
- 1 tbsp Icing sugar
Instructions
- Combine the flour, baking powder, salt, and sugar in a small bowl.
- Whisk in the oil, milk, and vanilla extract.
- Fold in the chopped strawberries and chocolate chips, if using.
- Pour the batter into a ramekin.
- Cook for 1 minute 30 seconds. You may have to cook for another 15- 30 secs, depending on your microwave.
- Let the cake cool down for a few minutes and then serve it warm, with the mascarpone cheese topping or whipped cream or ice cream. Enjoy!

This was my first time making a mug cake, and it was SO good!!! I didn't expect a cake made in the microwave to taste this amazing. I used fresh strawberries because they're in season right now and I had just cut some. Although I've baked with fresh strawberries lots of times, they have never tasted so flavorful once cooked in anything else I have ever baked. I added an extra 1/4 tsp of almond extract, and 1/8 tsp of cinnamon. I think the nutrition facts are wrong, though, because they say this has 41 grams of sugar, which would be absolutely wild! Fortunately, 1 and 1/2 tbsp of sugar is only 18.9 grams!
