Ingredients
1cupPeanuts, chopped into small bits
1/3cup Cashewnut, chopped into small bits
1/4cupCranberries, chopped into small bits
10Dates, pitted and chopped into small bits
1/4cupPopped amaranth
1/4cupPuffed Rice
1/4cupProtein powder
1/4cuppeanut butter
1/3cupHoney/maple syrup/ date syrup
1/4cup + 1 tbspCoconut oil
2tbspFlax seeds
1.5tbspWhite sesame seeds
1.5tbspBlack sesame seeds
Instructions
Preheat your oven to 170C. Line an 8" square pan with parchment paper.
Combine the chopped peanuts, cashews, cranberries, dates, popped amaranth, puffed rice, protein powder and all the seeds in a large bowl.
In a small saucepan, combine coconut oil and peanut butter. Gently heat this mixture till the peanut butter and coconut oil melt. Take it off the heat, whisk in the honey. This mixture should be smooth and well combined.
Pour the liquid mixture over the dry ingredients. Mix well and press mixture evenly into the pan.
Bake for 20-25 minutes. Allow this to cool completely, preferably in the refrigerator before cutting them into small squares. Use a sharp serrated knife for this. Store in an airtight container in the fridge. Enjoy!
